KALE + BEET SALAD WITH TURMERIC + SUMAC
It's easy to make excuses for not eating well as a single person. But when I replay in my head "I'm just gonna have a beer for dinner." What I'm really saying is "I don't deserve to be taken care of." Which is lame and not true.
It's very easy to make myself a beautiful, nutritious dinner. It's also an act of self-love. To go through the motions of nourishing oneself. It's empowering.
If you are a single person, try it tonite! Or pretend you are & only make dinner for yourself, tell your partner they're on their own! JK, make it for them too, just double the recipe.
This meal is one daily dose of turmeric. Neat.
Kale + Beet Salad with Turmeric + Sumac
1 bunch lacinato kale
4 small to medium beets
1/4 cup labne or greek yogurt or sour cream or creme fraiche, I mean whatever
1/4 teaspoon ground, dried turmeric or grated fresh if you have it
1/4 teaspoon crushed black peppercorn
1/2 teaspoon ground sumac
1/4 cup dill sprigs
1/4 cup chopped mint
2 T chopped pistachios
2 teaspoons nigella seed
Put your oven at 375 degrees. Rip a piece of aluminum foil big enough to hold the beets, drizzle with olive oil, sprinkle with salt, make a little package and roast in the oven for 30-40 minutes until you can poke one with a skewer and it goes in smooth. Rub the kale with a tablespoon of olive oil, lay it out on a baking sheet, sprinkle with salt. Combine the labne, turmeric, sumac, black peppercorn and a pinch of salt, mix mix mix. When the beets are done take them out of the oven, put them in a bowl and cover, let it sit for 10 minutes. Lower the oven to 350. Then, using a rag wipe the skins away & quarter the beets. Put the kale in the oven for about 15 minutes, until it's just starting to crisp. Wipe the labne on the bottom of a bowl or a plate. Put half the dill and mint on top. Layer the kale on top of that, then the beets. Then the rest of the herbs, the pistachios, and the nigella seed. That's it. Feast away!
